Lamb and Feta Rolls in Grape Leaves
Yield: 24 each
1 ½ lb ground lamb
½ tsp cinnamon
1/8 tsp nutmeg
1 tsp oregano leaves: dry
1 tsp kosher salt
½ tsp fresh ground black pepper
¼ cup minced onion
2 cups cooked rice
1 cup feta cheese crumbles
½ cups toasted pine nuts
½ cup golden raisins
1 tbsp chopped fresh mint
2 tsp chopped fresh cilantro
¼ cup olive oil
24 grape leave (bottled, rinsed)
- Sautee onion in olive oil over medium heat until blonde.
- Add the lamb meat and spices and cook thoroughly.
- Drain off any liquid and cool the lamb meat.
- Mix with all the other ingredients and then rollup in the grape leaves and serve.
